This recipe is an ideal meal to in incorporate into your diet—it’s loaded with antioxidants and other nutrients, but when it comes to calories and fat, its low on the totem pole.

Brussels sprouts are an ideal choice for those on diets and working with weight loss products, as they’re packed with dietary fiber, which helps us feel fuller longer and ultimately suppresses our appetite. This green leafy veggie is low on the glycemic index, yet rich in vitamins B6, C and K, as well as other important nutrients including omega-3 fatty acids, copper, folate, manganese, choline, phosphorus and potassium.

Pomegranates are considered one of the most powerful fruits around— they are rich in potent antioxidant compounds that have been found to reduce inflammation and decrease risk of many chronic illnesses and diseases. Their high content of antioxidants, vitamins and minerals help promote healthy digestion, boost heart health, improve skin and more.


Serve this salad warm for an explosion of some of the incredible flavors of fall—apple, citrus and rosemary. Enjoy!

Ingredients
1 lb. fresh Brussels sprouts, quartered and chopped
1 large apple, thinly sliced
1 sprig fresh rosemary, diced
½ cup feta or goat cheese
1/2 cup dried cranberries
1/2 cup walnuts, halved
1 tbsp extra virgin olive oil
1 pomegranate, seeded

Dressing
1 tbsp extra virgin olive oil
3/4 cup freshly squeezed orange or ½ cup freshly squeezed lemon
1 tsp apple cider vinegar

Warm the extra virgin olive oil on medium heat and then add the Brussels sprouts and apple slices. Cover and cook for about 10 minutes or until everything is tender. Toss in the rosemary and cook for another minute. Then add the walnuts and cranberries and toss for less than a minute.

For the dressing, simply whisk together the ingredients. Drizzle over the salad and then sprinkle with pomegranate seeds just before serving.
