Ingredients

6 eggs
10 Ounces frozen spinach, chopped
1 cup scallions chopped
2 tsps extra virgin olive oil
3/4 cup heavy whipping cream
6 oz low-fat swiss cheese, shredded
1/8 tsp ground nutmeg
Himalayan sea salt and freshly ground black pepper to taste

Preheat the oven to 350°F (175°C). Lightly grease a pie pan with extra virgin olive oil. Saute the scallions in olive oil over medium heat, stirring occasionally. When the scallions are soft, add the spinach. Stir occasionally and cool until the spinach is soft and moisture has evaporated.

Mix the eggs, swiss cheese and heavy whipping cream together in a bowl. Combine with the spinach mixture and blend well. Season with the nutmeg, Himalayan sea salt and freshly ground pepper. Pour into the pie pan and bake for approximately 30 minutes so that the eggs can set. Enjoy!
