It’s delicious for any meal and also makes the perfect side for your holiday dinners.

We always recommend clients load up on green leafy vegetables—and spinach is an excellent option. It’s perfect for those on easy weight loss programs because it’s rich in both protein and dietary fiber, so it’s very filling yet low in calories. Spinach is also extremely nutrient dense—it’s packed with at least 13 different flavonoid compounds that act as antioxidants, protecting the body from free radical damage. With its high content of vitamins C and A, it’s a very heart healthy food. In addition, this powerful leafy green is an awesome source of lutein, which promotes eye health, as well as omega-3 fatty acids, selenium, iron, niacin, folate potassium, magnesium, manganese, calcium and vitamins K, B2 and B6.

21/2 cups frozen spinach, chopped
2 eggs
½ cups scallions, chopped
1 cup low fat cream cheese
1 cup shredded Swiss cheese
2 tbsp fresh Parmesan cheese, grated
1 tsp fresh lemon juice
1 tsp garlic, minced
1 tsp extra virgin olive oil
1 tsp Himalayan sea salt

Preheat the oven to 350°F. Put defrosted spinach in a casserole dish. Saute the scallions in the extra virgin olive oil while you mix the other ingredients—except for the fresh Parmesan cheese—in the casserole dish. Add in the scallions and mix well. Sprinkle the fresh Parmesan cheese over the top of the casserole. Bake for 40 to 45 minutes—these cheese over the top should be a golden brown. Makes approximately eight nutritious servings.
