3 cups romaine lettuce, chopped
2 cups tomato, diced
1 medium cucumber, chopped
1/4 cup red onion, finely chopped
1/4 cup sliced ripe black olives
1/2 cup feta cheese, crumbled
2 tsp fresh dill, chopped
2 1/2 tbsp red-wine vinegar
1 tbsp extra virgin olive oil
1/4 tsp Himalayan sea salt
Freshly ground black pepper to taste
Whisk the extra virgin olive oil, red-wine vinegar, dill and Himalayan sea salt together in a bowl. Add the lettuce, veggies and feta and then toss to coat. Season with freshly ground pepper. Chill before serving.
