Spinach is an excellent source of folate, which also boosts cardiovascular health, in addition to magnesium, which has been shown reduce blood pressure.
Other benefits of spinach include its high content of vitamin K—one cup provides nearly 200 percent of the daily value that is necessary for bone health. It’s also a great source of lutein, which promotes healthy eyesight, as well as iron, calcium, manganese and potassium.

10 oz of frozen or fresh spinach
½ cup scallions, chopped
½ cup mushrooms, chopped
1/2 tsp garlic, minced
1 tsp extra virgin olive oil
1 tsp lemon juice
4 oz low-fat cream cheese
2 tbsp fresh parmesan cheese, grated
1 tsp Himalayan sea salt
Preheat the oven to 350° F. If you opt for frozen spinach, defrost it in advance. Saute the scallions and mushrooms in the extra virgin olive oil. Combine all the ingredients except for the Parmesan cheese in a casserole dish. Sprinkle parmesan cheese over the top of the mixture. Bake for 45 minutes—the cheese should be a golden brown.
