Low-Carb Breakfast Burritos That Build Muscle

This recipe is perfect for members of our medical weight loss clinics who are trying to eat healthy and build lean muscle. A breakfast that is packed with lean protein fills you up, promotes healthy digestion and is essential for building lean muscle. We always recommend that members of our medical weight loss clinics strive to get enough lean protein in their diet when they’re trying to lose weight.  

The reason we promote building lean muscle at our medical weight loss clinics is because the more lean muscle mass our bodies have, the more calories we will burn—the muscles literally require more energy to perform everyday activities. A pound of muscle burns between 75 and 150 calories a day, while a pound of fat uses only three calories per day. Plus, when we build lean muscle, our bodies become more efficient and look more toned, which provides motivation to continue with a healthy diet.

This meal is filling, tasty and low in fat and calories. You can also add other vegetables that you like to increase the fiber content and add different flavors to the mix.

2 tortillas made with whole wheat, such as Ezekiel 4:9 Sprouted Whole Grain Tortilla
4 egg whites, or 2 eggs and 2 egg whites
1 oz low fat cheddar cheese 
1/4 cup 1% cottage cheese 
1/2 cup chopped mushrooms 
1/4 cup chopped onions
¼ cup chopped tomatoes 
½ cup red pepper trimmed and diced 


Saute the onions, mushrooms and red pepper. Whisk together the eggs, tomatoes and cottage cheese and then pour the mixture over the sautéed veggies and cook until the combined ingredients are firm.

Warm the tortillas and then place the mixture down the center of each. Sprinkle with low fat cheddar cheese and fold the burrito. Serve with salsa.

Makes two servings.
