Bacon & Spinach Deviled Eggs

Game day is almost here! Some clients of our medical weight loss clinics recently shared that it can be a struggle to navigate Super Bowl parties when following a low carb diet. One of the best ways to overcome the hurdles of game day food is to bring a healthy dish—or serve a variety of low carb snacks if you’re the host.

These Bacon and Spinach Deviled Eggs are an awesome alternative to traditional, more fattening versions. They are very easy to prepare and can be stored overnight in the refrigerator for convenience. The best part is, a serving of one deviled egg only contains 100 calories and 8.5 grams of complete protein!

Eggs are an excellent choice for all diets and weight loss programs because they are a complete protein. This means they contain all nine of the essential amino acids our bodies need on a daily basis. Eggs are also an excellent source of iron, copper, zinc, selenium, vitamin D and B-complex vitamins. The spinach in this recipe is fiber rich and packed with nutrients and antioxidants including iron, magnesium, and vitamin A, C, E and K.

12 large hardboiled eggs
1 cup baby spinach
5 pieces cooked turkey bacon, chopped
1/4 cup plain nonfat Greek yogurt
1 ½ tsp lemon juice
2 tbsp Dijon mustard
1 tbsp coconut milk
Kosher salt and freshly ground black pepper to taste


Peel the hardboiled eggs and then slice them in half, lengthwise. Separate the yolks from the whites. Mix the yolks together with the nonfat Greek yogurt, lemon juice, mustard, coconut milk and baby spinach. Season with freshly ground black pepper and Kosher salt. Add to a food processor and blend until the mixture is a smooth consistency.

Set aside some of the chopped bacon for garnish and add the rest to the egg mixture. Stir to combine well. Spoon the mixture into each of the egg whites. Sprinkle with the remaining chopped bacon and serve.
