Low Carb Western Scramble

Eggs are considered a complete protein, making them one of the healthiest foods around. Avocados are rich in healthy fats, contain more potassium than bananas and boast abundant levels of folate and vitamins B5, B6, C, E and K. Cilantro is low in calories and has no cholesterol, yet contains dietary fiber, essential oils and is an excellent source of minerals including iron, magnesium, calcium and potassium. Coupled with the antioxidant-rich veggies in this recipe, this meal becomes a serious nutritional powerhouse that will fill you up for hours on end.

5 eggs
8 ounces low-sodium turkey sausage
1 avocado, diced
2 sweet potatoes, diced
I medium tomato, diced
½ cup scallions, diced
1 bunch of cilantro
Choice of salsa, Tapatio or Sriracha to taste

Preheat the oven to 400ºF. Saute the sausage over medium heat. Add the sweet potatoes and cook until crispy. If the sausage starts to get too brown, remove it and add it back once the sweet potatoes are done. Add the eggs and scramble together.  Add the tomatoes and scallions during the last minute or two of scrambling.

Remove the mixture from heat and then mix in the diced avocado and cilantro. Top off with salsa, Tapatio or Sriracha.
