This recipe for Chocolate Banana Pancakes is an excellent option for when you want to switch things up and deviate from your usual protein shake, omelet or other high-protein breakfast.
This recipe is low in fat and calories, but packed with protein and other healthy nutrients. The bananas provide much-needed potassium to your diet, while the flax seeds are loaded with micronutrients, dietary fiber, vitamin B1, manganese and alpha-linolenic acid, the essential fatty acid also known as ALA. The eggs are a complete protein and help make this meal filling, while providing a bevy of important vitamins and minerals including selenium, choline, biotin, iodine, phosphorus and vitamins A, B2, B5, B12 and D.

2 scoops of chocolate protein powder
2 tbsp gluten-free baking mix
2 tbsp of unsweetened cocoa powder
½ tsp cinnamon
1 banana, mashed
2 tbsp ground flax seeds
1/2 tsp baking powder
4 tbsp unsweetened coconut milk
Whisk all the dry ingredients together in one bowl. In another, combine the coconut milk, eggs and mashed banana. Once mixed well, add the wet ingredients to the dry ones and fold with a rubber spatula. Mix well but be careful not to mix too much.
Heat a non-stick pan on medium heat. Pour ¼ cup of batter to make each pancake. Heat for approximately three to four minutes, until bubbles appear. Flip with a spatula and cool for less than three more minutes.
Pour a spoonful of low calorie maple syrup to pour over each and serve.
