This tasty recipe is packed with lean protein, antioxidants and other important nutrients, and can be served as an appetizer, entrée or even dessert. 8 ounces skinless chicken breast, grilled
2 cups fresh baby spinach
1 orange, sliced
handful of raspberries
handful of blackberries
½ cup pecans
2 tbsp sunflower seeds
Freshly ground pepper to taste
Grill the chicken for 5 to 7 minutes on each side. Remove and set aside. Tear up the spinach, if necessary, and place in large bowl. Add the chicken and then sprinkle with the berries and add oranges. Toss together. Sprinkle the pecans and sunflower seeds over the mixture, season with the freshly ground pepper, and serve.
