Berry Chicken Salad

This is the perfect time of year to take advantage of all the delicious seasonal produce and load up on refreshing salads. This tasty recipe is packed with lean protein, antioxidants and other important nutrients, and can be served as an appetizer, entrée or even dessert. The sunflower seeds add crunchy texture and pack a serious nutrient punch, and there is so much juicy fruit, you won’t even need dressing. However, if you want, you can toss with extra virgin olive oil and balsamic vinegar or choose a light dressing from the various weight loss products available.

The skinless chicken in this salad provides the lean protein you need when you’re trying to lose weight. The chicken, coupled with all the fiber from the berries, spinach and orange, will fill you up as well as any entrée. The sunflower seeds are a rich source of vitamins B1 and E, as well as essential minerals such as magnesium, copper and selenium. You’ll get a strong dose of vitamin C and powerful antioxidants, as the orange, spinach, blackberries and raspberries all boast strong levels. In addition, the spinach is an almost unrivalled source of vitamin K, and provides good amounts of folate, manganese, iron, copper, calcium, potassium and vitamins A, B1, B2, B6 and E.

8 ounces skinless chicken breast, grilled
2 cups fresh baby spinach
1 orange, sliced
handful of raspberries
handful of blackberries
½ cup pecans
2 tbsp sunflower seeds
Freshly ground pepper to taste

Grill the chicken for 5 to 7 minutes on each side. Remove and set aside. Tear up the spinach, if necessary, and place in large bowl. Add the chicken and then sprinkle with the berries and add oranges. Toss together. Sprinkle the pecans and sunflower seeds over the mixture, season with the freshly ground pepper, and serve.

Makes one to two servings.
