Chocolate Raspberry Pudding

When members of our medical weight loss centers need to satisfy a sweet tooth, they turn to recipes like this nutritious yet delicious Chocolate Raspberry Pudding. It features fiber-rich berries, antioxidant-packed dark chocolate and the bevy of nutrients that chia seeds provides.

A staple of both the Aztec and Mayan diets for centuries, chia seeds pack a serious nutrient punch. They are rich in essential omega-3 fatty acids and are a serious source of fiber—just two tablespoons provides a whopping 10 grams. This combination makes them very filling and helpful in reducing inflammation and promoting healthy digestion, making them an ideal choice for those on diets and easy weight loss programs. Chia seeds are also rich in antioxidants and important minerals including manganese, magnesium, calcium and phosphorus, all of which help you maintain a healthy weight.

This is the perfect summer dessert—you’ll forget that this tasty pudding is approved for diets and easy weight loss programs.

Ingredients
8 tbsp chia seeds
2 cups unsweetened coconut milk
8 large squares of dark chocolate
1 cup frozen raspberries

Melt six of the chocolate squares in a pot over low heat. When it’s almost melted, pour one cup of coconut milk over the chocolate and stir slowly. Continue to stir until it’s combined. Remove the pan from the heat and set aside to cool to room temperature.

Combine the other cup of coconut milk with most of the frozen raspberries (set some aside for garnish) and blend or puree until smooth. Pour into a sealable plastic or glass container and add 4 tbsp of chia seeds. Mix well. Once it’s fully mixed together, cover and put in the refrigerator.

Take the melted chocolate mixture and put it into another glass or plastic container. Add the remaining chia seeds and mix well. Cover and put in the refrigerator. Both of the mixtures should remain in the refrigerator overnight.

When you’re ready to serve, divide each mixture and put into two bowls, using a half and half division. You can put one on top or side by side—either way, it will look beautiful. Shave the remaining dark chocolate squares over the servings, top with some frozen raspberries and serve.
