Quinoa Berry Salad

This recipe is packed with antioxidants and other nutrients that will help you look and feel good, while keeping you on track with any diets and easy weight loss programs that you’re interested in following. While this Quinoa Berry Salad is refreshing and easy to make, it’s also extremely filling. The quinoa and berries are both loaded with dietary fiber, and the quinoa is also an excellent source of protein, which makes this salad an excellent way to stave off hunger pangs. Quinoa is also a great sources of important minerals such as copper, zinc, folate, iron, phosphorus, potassium, manganese and magnesium. In addition, both blueberries and raspberries are extremely antioxidant-rich and contain a bevy of important vitamins and minerals.

1 cup quinoa
1 cup fresh raspberries
1 cup fresh blueberries
½ cup fresh lemon juice
½ cup scallions, diced
1 small garlic clove, minced
1 tsp. extra virgin olive oil
1½ tbsp. hummus
½ cup slivered almonds, toasted
½ cup macadamias, toasted
½ cup fresh mint leaves
Himalayan sea salt and freshly ground pepper to taste

Boil the quinoa in water with a pinch of Himalayan sea salt for 15 minutes. While it cooks, combine the hummus with the scallions, garlic and extra virgin olive oil. When the quinoa is cooked, let it drain and sit for a few minutes. Put it in a bowl and add the lemon juice. Refrigerate it or let it sit at room temperature if you serve it immediately.

When you’re ready to make the salad, let the quinoa sit out at room temperature for 15 to 20 minutes. Add all the ingredients left except for the berries and toss together. Season with the Himalayan sea salt and freshly ground pepper to taste. Add the berries and serve.

Makes two servings.
