Low Carb Smoked Salmon & Scrambled Eggs

Breakfast can be important when you’re on a diet or following one of our easy weight loss programs, as it helps to fill you up and give you energy for your day. This awesome breakfast recipe is savory and nutritious, and best of all, it can be served any time of day. This Smoked Salmon with Scrambled Eggs is a nearly perfect meal, as it boasts lean protein, fiber, omega-3 fatty acids and an array of other valuable nutrients.

The eggs in this dish provide you with a complete protein, which means they contain all of the nine essential amino acids our bodies need to function optimally.  Plus, they are loaded with choline, folate, iron, zinc, selenium, thiamine, lecithin, iodine and vitamin D. The salmon is another excellent source of lean protein and omega-3 fatty acids, as well as niacin, choline, biotin, potassium, selenium, phosphorus, and vitamins B6, B12 and D.

The spinach packs a dietary fiber punch, which fills us up and promotes healthy digestion, yet contains barely any fat or cholesterol. Spinach also contains protein and is rich in iron, zinc, calcium, folate, potassium, thiamin, copper, phosphorus, magnesium, manganese and vitamins A, B6, C, E and K.

This recipe is super easy to make and will only take you a few minutes to prepare. Enjoy!

Ingredients
4 eggs
1 tbsp extra virgin olive oil
8 oz smoked salmon
1 cup spinach
2 tbsp capers
Himalayan sea salt and freshly ground pepper to taste

Whisk the eggs and then scramble them on low heat with extra virgin olive oil until the reach your desired consistency. Place the eggs on a bed of spinach, add the smoked salmon on top. Spoon capers over each serving. Season with Himalayan sea salt and freshly ground pepper and serve.

Makes two servings.
