Low Carb BLTs

Just because you’re on a low carb diet doesn’t mean you have to give up the delicious taste of a classic BLT.  By swapping out the bread for some crispy lettuce, you’ll turn this decadent mainstay into light fare that can be served any time of day. This version is filled with protein, making it a truly guilt-free, nutritious meal that is perfect for all diets and easy weight loss programs.

Both the lean bacon and hardboiled egg provide high levels of protein, with the egg being especially nutritious since it’s considered a complete protein. The tomatoes are an excellent source of folate, thiamin, vitamins A, B6, C, and K, and also contain good levels of copper, phosphorous, potassium, magnesium and manganese. In addition, they are packed with antioxidants such as lycopene, which promotes healthy bones, protects the skin against harmful UV rays and helps prevent cardiovascular disease.

For some different flair and omega-3 fatty acids, add an avocado to the mix. To add some extra savory flavor, spread a bit of lemon aioli onto the lettuce.

4 slices lean center-cut bacon or turkey bacon 
1 tbsp light or reduced-fat mayonnaise 
5 large iceberg lettuce leaves
2 large Roma tomatoes, diced
2 large hardboiled eggs, sliced
1/2 medium lemon
¼ tsp freshly ground black pepper

Cook the bacon strips until they are as crispy as you like. Set them aside on paper towels to drain. Grate the lemon zest into a bowl and squeeze some lemon juice into it. Add the light or reduced-fat mayonnaise and mix well.  Remove four lettuce leaves and shred the other. Dice the tomatoes and then toss with the shredded lettuce, bacon and egg. Spread the lemon mixture onto the lettuce.  Add the BLT and egg mixture and season with the freshly ground black pepper. Wrap the lettuce around the filling and serve.

Makes four servings.
