Sometimes we all get a chili craving—the good news is, even if you’re following one of our easy weigh loss programs, you can still partake in some healthy chili. There are delicious low carb chili recipes out there that taste as good as any other version—we posted one for Low Carb Pumpkin chili last fall that was a complete antioxidant-rich hit. This one is more old school but is still a nutritional powerhouse that the whole family will enjoy.
Your best bet is to go with lean ground turkey, but if you do choose beef, opt for grass-fed. They are both great sources of lean protein, which satiates those hunger pangs and increases lean muscle mass. The spices in this recipe help boost your metabolism and the red bell pepper, tomatoes and tomato paste are loaded with antioxidants and other nutrients.

1 lb lean ground turkey (or grass-fed beef)
1 cup tomato paste
2 small tomatoes, diced
1 cup scallions
1 red bell pepper, diced
1 tsp ground cumin
1 tsp ground coriander
½ tsp chili pepper
½ tsp garlic powder
Himalayan or Kosher sea salt and pepper to taste
Season the ground turkey or beef with all of the spices in the recipe and put in a saucepan. Brown the meat and then season with Himalayan or Kosher sea salt and pepper to taste. Add the peppers and scallions and cook for another 2 minutes or so. Then combine the mixture with the celery, tomatoes and tomato paste and add to a pot. Stir well and bring to a boil over medium high heat. Once it boils, reduce to medium low heat and simmer for one hour to an hour and a half. Stir every 8 to 10 minutes or so.
Top with your favorite garnish and serve.
Makes four servings.
