Warm Brussels Sprouts and Pear Salad

This delicious and nutritious salad screams Fall and is perfect for our easy weight loss programs.  It’s warm and filling, yet packed with fiber and nutrients that will fill you up and keep you healthy. You can serve it as an appetizer or add some chicken to make it an entrée. 

Don’t be fooled by their tiny size—Brussels sprouts are a powerful superfood. They’re low in calories but packed with dietary fiber—about three to five grams per cup. This makes Brussels sprouts the perfect food for easy weight loss programs, since they stave off hunger and keep your digestive system busy. Their rich nutrient content includes vitamins A, C and K, folate, potassium, choline, copper, calcium, phosphorus, potassium and omega-3 fatty acids. The pears and apples are also loaded with dietary fiber and other nutrients, including vitamin C and antioxidant phytonutrients such as flavonoids.

1 pound Brussels sprouts
1 pear, cored and cubed
1 apple, cored and cubed
1 tbsp extra virgin olive oil
1 tsp extra virgin olive oil
2 tbsp maple syrup, divided
1/2 cup feta, crumbled
Kosher sea salt to taste

Dressing ingredients

2 tbsp lemon juice
1 tsp maple syrup
1/2 tsp mustard powder
Small sprinkling of Kosher sea salt
2 tbsp extra virgin olive oil


Preheat your oven to 425 degrees F. Toss the pears and apples in a bowl with the maple syrup and one tbsp extra virgin olive oil. Then put them on a baking sheet and roast in the oven for 15 to 17 minutes.

While the apples and pears are roasting, toss the Brussels sprouts with 1/2 tsp extra virgin olive oil and maple syrup. Season with Kosher sea salt to taste. When the apple and pear slices are out of the oven, roast the Brussels sprouts for 15 minutes. Turn them over and put them back in the oven for another five minutes.

While the Brussels sprouts roast, mix the lemon juice, extra virgin olive oil, mustard powder and maple syrup together in a bowl. Whisk together until combined well.  

When the Brussels sprouts are finished, combine them with the pears and apples. Drizzle with the dressing and top with crumbled feta. Season with Kosher seal salt to your liking and serve warm.

Makes four servings.
