Cheese-Free Taco Bowls

These low carb Taco Bowls give a whole new twist to Taco Tuesday. They’re perfect for those following low carb diets or using medical diet pills to lose weight. Unlike regular tacos, which rely on cheese for flavor, it’s the meat and veggies in these bowls that pack a tasty punch. By swapping out cheese for sweet potatoes, you add a bevy of important nutrients to this meal. Sweet potatoes are very antioxidant-rich—they are loaded with both vitamin A, in the form of beta-carotene, and lycopene. These two nutrients both help combat sun damage and promote healthy eyesight. Sweet potatoes are also an excellent source of vitamins C and B6.

The lean protein in the form of turkey or ground beef used in this recipe helps you build lean muscle mass, which is essential for weight loss. The black beans are another good source of protein and fiber, which satiates hunger. The avocado provides healthy monounsaturated fats while the other veggies boast fiber and other vitamins and minerals.

2 sweet potatoes, shredded or spiralized
2 medium sized tomatoes, diced
1 lb lean ground beef or turkey
1 cup scallions, diced
1 1/2 cups black beans
1 cup red onion, chopped
½ cup water
1 Hass avocado, diced
Your favorite taco seasoning
Extra virgin olive oil
Kosher sea salt and freshly ground black pepper to taste


Saute the ground beef or turkey over medium heat with extra virgin olive oil.  When it’s cooked, mix in the taco seasoning, scallions, sweet potatoes, black beans and water. Combine well and simmer for approximately 15 minutes. Remove from the oven and let the mixture cool slightly before tossing in the tomatoes.

Separate into bowls. Top each bowl with diced avocado and salsa. Season with Kosher sea salt and freshly ground black pepper to taste and serve.

Makes four servings
