Pumpkin Chia Seed Pudding

This Pumpkin Chia Seed Pudding will satisfy your sweet tooth while helping you achieve success with medical diet pills. This recipe is easy to prepare and makes the perfect dessert or snack. Pumpkin is a delicious part of the fall season. It’s a favorite among members of our weight loss centers because of its high fiber content and small amount of calories. One eight ounce serving packs approximately 1.7 grams of fiber and only 50 calories.  Pumpkin is also an excellent source of potassium, vitamin A and plant-based compounds such as phytosterols and carotenoids, including beta-carotene. Studies show that pumpkin also contains high levels of tryptophan, which boosts serotonin levels and improves sleep.

Chia seeds pack a serious nutritional punch. They’re low in calories yet rich in quality protein, fiber and a wide variety of antioxidants. Chia seeds contain high levels of both omega-3 and omega-6 fatty acids, calcium, potassium, phosphorus, copper, zinc, iron, iodine and vitamins A, B, D and E. The combination of these two nutritious ingredients and the spices in this recipe make it a powerful weight loss treat.

1 ½ cup pumpkin puree
3 cups unsweetened coconut milk 
1/2 cup chia seeds
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/2 tsp cloves
½ tsp pumpkin pie spice
2 tsp vanilla extract


Whisk together the pumpkin puree and coconut milk. Add all of the spices and vanilla extract and whisk until combined well. Add the chia seeds and stir. Put into bowls, cover with plastic wrap and chill in the refrigerator. For best results, chill overnight. If overnight is not possible, a few hours will do the trick.

Makes six to eight servings.
