This salad is loaded with protein, fiber and antioxidants, but lacks the carbs that make a burger so sinful. Choose lean ground beef or turkey to provide an excellent source of protein that fills you up and helps build lean muscle. Avocado is a rich source of heart-healthy monounsaturated fatty acids, potassium, fiber and vitamin C, E and K. 1 lb lean, grass-fed ground beef or turkey
4 cups chopped lettuce of your choice
4 dill pickle spears, cubed
1 whole red onion, chopped
4 ounce Hass avocado, cubed
4 whole Roma tomatoes, diced
1/4 cup reduced-fat, sharp cheddar cheese, shredded
Kosher salt and freshly ground black pepper to taste
1 tbsp yellow mustard
1 tbsp ketchup
1 tbsp Dijon or spicy mustard
1/4 cup light mayonnaise
1 tsp dill pickle juice
1/4 tsp paprika
1/4 tsp onion powder
1/4 tsp garlic powder
Season the lean ground beef or turkey with Kosher salt and freshly ground black pepper. Brown in a skillet over medium heat for approximately five minutes. Whisk together all of the ingredients for the dressing while the meat cooks. Add the onions and saute for another two to three minutes. Remove the mixture from the heat and drain.
Add lettuce to four bowls. Add meat, cheese, tomatoes, pickles and avocado to each serving. Pour dressing over each serving and toss well.
Make four servings.
