4 chicken breasts, skinless
2 large apples, diced
1 cup pecans, chopped
1 tsp cinnamon
½ tsp cardamom
3 tbsp olive oil,
1 garlic clove, minced
1 strip turkey bacon, cooked and diced
1 cups coconut milk
Kosher salt and freshly ground black pepper to taste
Mix together the cinnamon and cardamom. Add a dash of kosher salt and freshly ground black pepper and combine well.
Pound the chicken breasts and slice them in half. Rub each of the chicken breasts in the spice mixture until coated. Then cube into small pieces about one inch long.
In a skillet, warm the extra virgin olive oil over medium heat. Once it’s warmed, add the chicken and stir occasionally. Cook for about four to five minutes before adding in the garlic, pecans and apples. Cook for three to four more minutes—the apple pieces should be soft. Add the coconut milk and cook for the next three to four minutes. Stir continuously to help the sauce thicken as it garner spices from the chicken. You will only need to cook it another four to five minutes. The sauce will be thick and the chicken cooked through. Sprinkle with the diced turkey bacon bits, add your favorite greens and serve.
