Low Carb Breakfast Salad

No matter which easy weight loss programs you follow, a low carb breakfast is an excellent way to start the day. By filling up on lean and complete protein, you will get the energy you need while helping your body build lean muscle. Lean muscle doesn’t just make you look more toned, it helps you increase your caloric burn throughout the day.

Breakfast doesn’t need to be limited to traditional morning food—this salad is testament to that fact. It’s packed with flavor and antioxidants and the protein from both the eggs and lean bacon or sausage will fill you up for hours. The avocados will also help curb cravings, as they are loaded with heart-healthy monounsaturated fatty acids. They are also an excellent source of potassium, which fights bloating, and have been proven to help lower bad cholesterol and triglyceride levels. Tomatoes are rich in dietary fiber, antioxidants, vitamins and minerals, including biotin, lycopene, molybdenum, folate, niacin and vitamins A, B6, C, E and K.

This savory breakfast is perfect for individuals following diets and easy weight loss programs, as well as those simply wanting a healthy start.

Ingredients

8 eggs, hard-boiled
1 lb lean turkey bacon or sausage, cubed or diced
2 avocados, diced
3 tomatoes, diced
½ cup scallions, diced
½ cup basil, chopped
Fresh juice of one lemon
Himalayan sea salt and freshly ground black pepper to taste

Instructions

Cook the lean turkey bacon or sausage. Set aside to drain. Chop, cube or dice once it is cool.  

In a bowl, mix the avocados, tomatoes, scallions, basil and lemon juice until combined well. Cut the eggs into pieces and add to the mixture. Stir well and mash the avocado and eggs. The yolks should develop a creamy consistency.

Add in the lean turkey bacon or sausage. Season with Himalayan sea salt and freshly ground black pepper to taste. Add too bowls and serve. Makes two to four servings.
