Walnut Berry Salad

This Walnut Berry Salad is a refreshing meal that is fully approved for our easy weight loss programs. While it can be served as an appetizer or entrée, it’s sweet enough to be served as dessert. It will satisfy that sweet tooth that gets you in trouble with your scale and fill you up with its high fiber content. Plus, this recipe is very easy to prepare.

The berries and greens in this salad pack a serious antioxidant punch that keeps you healthy. This is especially important when you’re cutting calories as part of a diet or one of our easy weight loss programs. Blueberries are considered one of the most antioxidant-rich foods in the world. They have high levels of phytonutrients, fiber, folate, potassium, and vitamins B6 and C, all of which boost heart health. Blueberries are also loaded with proanthocyanidins, which have powerful anti-inflammatory and anti-aging properties.

Like their counterparts, strawberries are also packed with fiber, vitamin C and folate. These sweet berries contain anthrocyanin, a potent antioxidant that helps protect against the sun and free radical damage. Walnuts are another rich source of antioxidants, as well omega-3 essential fatty acids, copper, manganese, molybdenum and biotin. We chose Manuka honey for this recipe as it is touted as one of the most beneficial honeys available, with unique healing and anti-inflammatory benefits.

1 cup strawberries, quartered
2/3 cup blueberries
4 cups spinach or mixed baby greens
2 tbsp walnuts, chopped
2 oz goat cheese, softened
1 tsp Manuka honey
Himalayan sea salt and freshly ground black pepper to taste


Combine the Manuka honey and goat cheese in a bowl and mix well. Season with Himalayan sea salt and freshly ground black pepper to taste. Next add the salad greens, walnuts, blueberries and strawberries. Toss well and serve.

Makes two to four servings.
