1 large tomato, diced
1/3 cup white onion, diced
1 Red bell pepper, diced
2 – 3 pickled jalapeños, finely chopped
3 oz. low fat shredded cheese
Extra virgin olive oil
Kosher salt and freshly ground black pepper
1 avocado, chopped
Warm the extra virgin olive oil over medium heat. Add the onions, tomatoes, bell peppers and jalapenos and saute for approximately three minutes.
While the veggies saute, whisk the eggs until they are beaten. Add them to the veggies and scramble, stirring slowly. After about two to three minutes add the avocados and cheese and let it melt while continuing to stir the egg mixture. Remove from heat and season with Kosher salt and freshly ground black pepper.
