What’s so great about this recipe is that it’s packed with flavor and contains a bevy of important nutrients. The tomatoes and red bell peppers are rich in potent antioxidants including lycopene, beta-carotene and vitamin C. Lycopene is a cancer-preventative phytonutrient that fights free radical damage, promotes healthy eyesight and helps prevent UV damage. Beta-carotene supports immunity, promotes healthy skin and tissue, and like lycopene, also is vital to healthy eyesight. Vitamin C boosts our immune systems, reduces hypertension, helps maintain skin elasticity and combats chronic illnesses and diseases.

The jalapeno peppers in this recipe add tangy flavor and boost the metabolism, which is ideal for those on diets and easy weight loss programs. Serving avocado on the side provides an excellent source of healthy fats that fill you up and contributes to a healthy heart.
