Honey Bourbon Salmon

This delicious take on salmon is perfect for anyone on a diet or working with medical diet pills. It’s healthy and packed with essential nutrients, yet delicious and company-worthy. Serve with fresh or grilled asparagus spears, sautéed spinach or skewered baby potatoes for a perfectly balanced meal. Ingredients

2 6-ounce skinless wild-caught salmon fillets 
¾ cup Bourbon
2 tbsp Manuka honey
2 tbsp low-sodium soy sauce
2 teaspoons grated peeled fresh ginger
1 garlic clove, minced
½ tsp red pepper flakes
2 tsp sesame seeds
2 tsp green onions, thinly sliced
Extra virgin olive oil cooking spray
Kosher sea salt and freshly ground black pepper to taste

Directions

Combine the bourbon, Manuka honey, low-sodium soy sauce, grated ginger, garlic, red pepper flakes and salmon in a large sealable container or plastic bag. Marinate in the refrigerator for an hour to an hour and a half. Remove fillets from the container or bag and season with Kosher sea salt and freshly ground black pepper to taste.

Spray the grill with extra virgin olive oil cooking spray. Grill the salmon for two to three minutes on each side and remove. Sprinkle each filet with sesame seeds and thinly sliced green onions.

Makes two servings.
