This recipe was shared by a member of our medical weight loss clinics who has enjoyed great success with our low carb program. When it comes to dieting, lean protein sources such as chicken are ideal. It’s considered a complete protein source because it has all of the nine essential amino acids our bodies need to build muscle. Chicken helps build lean muscle, which increases the number of calories our bodies burn on a daily basis. Chicken is also an excellent course of mood-boosting nutrients including vitamin B5 and tryptophan.
The bell peppers in this recipe are packed with immunity-boosting vitamin C and an array of powerful phytochemicals and carotenoids, including beta-carotene, lycopene and vitamin E. The red chili pepper contains capsaicin, an alkaloid compound that gives it a spicy flavor and has been shown to boost metabolism. The fresh ginger is renowned for its healing properties and has been shown to quell nausea and promote healthy digestion.

4 skinless chicken breasts, cubed
2 tbsp cornstarch
2 tbsp extra virgin olive oil
1 tsp garlic, minced
1 cup red bell pepper, chopped
1 cup yellow bell pepper, chopped
1 red chili pepper, diced
1 cup fresh pineapple chunks or 1 can pineapple
Himalayan sea salt and freshly ground pepper to taste
¼ cup scallions, diced (for garnish)
½ cup Manuka honey
1/3 cup reduced sodium soy sauce
1 1/2 tbsp rice wine vinegar
1 tsp fresh ginger, grated
1 tbsp cornstarch
1 tbsp water
Whisk together the Manuka honey, water, reduced sodium soy sauce, rice wine vinegar, grated ginger and cornstarch.
Season the chicken with Himalayan sea salt and freshly ground pepper. Put in a sealable contain with two tablespoons of cornstarch and shake until thoroughly coated.
Warn the extra virgin olive oil over medium heat. Add the chicken breasts. Cook on each side for two minutes. Add the garlic, bell peppers and chili pepper and stir while it cooks for three minutes. Add the pineapple and stir. Add the sauce and for about five minutes, until it thickens. Remove from heat.
Garnish with scallions and serve.
Makes four servings.
