Ingredients

4 skinless chicken breasts, halved
4 cups salad greens
4 large tomatoes, chopped
1 large cucumber, chopped
1/2 white onion, sliced
1/2 cup Kalamata olives
½ cup feta cheese, crumbled
1/4 cup extra virgin olive oil
2 tbsp red wine vinegar
Kosher salt and freshly ground pepper to taste

Directions

Brush the chicken breasts with extra virgin olive oil and then grill for five minutes on each side. Once the chicken is done, cut into cubes or slice.  

Combine the greens, chicken, tomatoes, cucumber, onion slices and olives in a salad bowl. Sprinkle the crumbled feta and toss.

To make the dressing, simply combine the red wine vinegar and extra virgin olive oil in a bowl. Season with Kosher salt and freshly ground pepper to taste. Drizzle over the salad and serve.
