½ cup French green lentils, cooked
½ cup tomatoes, chopped
1/2 cup chopped radish
1 cup Artichoke Hearts, chopped
2 cups fennel, chopped
4 cups baby spinach
1 tbsp sunflower seeds, unsalted
1 orange, cut into wedges
2 tbsp Extra virgin olive oil
2 tbsp lemon juice
2 tbsp Lemon juice
1 tsp orange zest
Kosher salt and freshly ground black pepper to taste
To make the dressing, simply combine the ingredients in a food processor or blender. Mix well.
To make the salad, combine the ingredients together and toss well. Drizzle dressing over each side or serve on the side.
