Chicken is an ideal ingredient for meals in line with diets and weight loss programs because it’s an excellent source of lean protein. Consuming lean protein is critical for weight loss, as it fills us up and helps us increase our muscle mass, which in turn, boosts our calorie burn.

What may be more of a surprise to many is the myriad of health benefits associated with balsamic vinegar. Used in ancient times as a tonic for its healing properties, much research has shown that its antioxidant content yields anti-bacterial, anti-inflammatory and anti-viral properties that make it effective for treating infections and wounds. It’s been shown to suppress appetite and boost the activity of the digestive enzyme pepsin that improves metabolism, making it ideal for weight loss programs. Balsamic vinegar also has a high content of polyphenols that fight cell damage and aging, boosts immunity, reduces cholesterol and helps prevent anemia and fatigue. In addition, balsamic vinegar contains essentials minerals that can strengthen bones and nutrients that boast the potential to protect against heart disease, cancer and other inflammatory illnesses.

Ingredients
3 skinless chicken breasts
½ cup aged Balsamic vinegar
2 tablespoons extra virgin olive oil
2 tablespoons Dijon mustard
2 tablespoons fresh lemon juice
2 garlic cloves, chopped
1 teaspoon lemon zest
1 teaspoon dried basil
1 teaspoon Himalayan sea salt
Freshly ground black pepper

Start by making the marinade. Whisk together the balsamic vinegar, olive oil, Dijon mustard, lemon juice, garlic, Himalayan sea salt and freshly ground black pepper. Seal the mixture with the chicken breasts and refrigerate for a minimum of three hours, or ideally, overnight.

When you’re ready to cook the chicken, preheat the oven to 400 degrees F. Lightly grease a baking dish with olive oil before you place the chicken breasts on it. Roast the chicken for approximately an hour. Drizzle the lemon zest and basil over the chicken before serving. Enjoy!
