We love when members of our weight loss centers share their low-carb recipes with us! This week, we have a delicious recipe for roasted salmon and cauliflower that you will love! It’s packed with important nutrients that help keep us healthy and trim, such as the very important omega 3 fatty acids, also known as “healthy fats.” It is important to integrate these healthy fats into our diet because they help satiate hunger while providing antioxidant benefits. In addition, studies show that omega 3 fatty acids can boost our moods, which helps curb emotional eating.
At our weight loss centers, we promote eating lots of vegetables for their high fiber content, which helps us stay full longer, as well as their typically high levels of antioxidants, vitamins and minerals. Caulifower is a cruciferous vegetable that contains important nutrients including vitamins C and K, as well as glucosinolates, compounds that contain sulfer that have been found to lower the risk of cancer. Glucosinolates are only found in cruciferous vegetables, which makes this dish a nutrient packed low-carb recipe.
Preheat oven to 450 degrees. Chop the garlic and mix with the red-pepper flakes and Himalayan sea salt. Using the flat side of a knife, mash mixture the mixture together until it forms a paste. Combine the paste with the extra virgin olive oil and mix well.
Cut the cauliflower into large florets, and toss in the mixture to coat. Spread the combination onto a baking sheet and roast for approximately15 minutes. Take out the mixture and place the fillets into the center of the sheet. Arrange two lemon slices on each fillet and roast for 15 minutes or until the salmon is opaque. Garnish with the remaining lemon slices.
