Since our last spinach recipe was such a hit, we thought we would share another one for a quiche that is absolutely delicious and easy to prepare. This quiche is going to be crust-less to keep the carb content low.
We recommend eating lots of green leafy vegetables when you’re following diets or easy weight loss programs, especially a nutritional powerhouse such as spinach. It’s considered one of the original superfoods, due to its high antioxidant content and the host of vitamins and minerals it boasts. Spinach is a great source of omega 3 fatty acids, the healthy fats that help satiate our hunger, as well as vitamins A, K, D and E and many trace minerals. Spinach also contains a bevy of flavonoid compounds that have anti-inflammatory and anti-cancer properties, and carotenoids that promote eye health. In addition, its high mineral content helps to alkalize the body.

Preheat the oven to 350 degrees. Drain the thawed spinach. Beat the eggs and mix them with the cheese, salt and pepper. Heat the extra virgin olive oil in a pan and sauté the onions. Stir in the spinach and cook until the moisture is gone. Combine the eggs mixture with the spinach and mix well.
Lightly grease a 9-inch pie pan and pour the mixture into it. Bake for 30-32 minutes. Let stand a few minutes before serving.
