This recipe for Balsamic and Apple Chicken combines the benefits of lean protein with spices that rev our metabolism and the healing properties of aged balsamic vinegar.

Chicken is an excellent source and is an ideal ingredient for recipes for a low carb diet because it’s lower in fat, carbs and sodium than beef, and is rich in essential nutrients such as vitamin B6, niacin, phosphorus and selenium.
Using spices such as the garlic, paprika and pepper in this recipe is a great way to add flavor, while providing an array of antioxidants and boosting metabolism. Balsamic vinegar is loaded with antioxidants that boost immunity and guard against free radical damage, and has anti-inflammatory properties that prevent cardiovascular disease and some forms of cancer. In addition, studies show that Balsamic vinegar suppresses the appetite and slows down the time it takes for our stomachs to empty.
Mix together the chicken broth, balsamic vinegar, apple cider, lemon juice and spices. Place the chicken in a slow cooker and pour the mixture over meat. Cover and cook on low for 4 hours. Slice the apple and place the slices over the chicken, and cook for another 30 to 40 minutes or hours or until chicken is tender. Serve with steamed spinach, green beans or peas and any other vegetables you enjoy.
