As we’ve mentioned in previous blog posts, chicken is an excellent choice for a diet low in carbohydrates because it’s high in protein, low in fat and loaded with nutrients such as niacin, vitamin B6, selenium and phosphorus, among others. A great way to make this even better for your diet is to add your favorite veggies into the mix to increase the antioxidant content and make it healthier overall.

2 lb. skinless chicken breasts
2 slices cooked turkey bacon, diced
½ cup mushrooms
1 onion, chopped
3 carrots, sliced
2 celery stalks, sliced
1 jar spaghetti sauce
3 cups whole wheat penne pasta, uncooked
¼ cup chopped fresh basil
2 Tbsp. low-fat, grated parmesan cheese
1 Tsp extra virgin olive oil
Saute the chicken in a pan with the extra virgin olive oil until it’s brown on both sides. Move it to a plate when it’s cooked. Cook the carrots, mushrooms, onions and celery in a pan for about five minutes, stirring often. Stir in the spaghetti sauce. Add the chicken and simmer everything on medium-low heat for about 30 minutes, stirring occasionally.
While the chicken is cooking, make the pasta. When both are finished, top the pasta with the chicken mixture and sprinkle with the basil, bacon and parmesan cheese.
