Low Carb Pizza Casserole

1 pound Italian sausage
1 tbsp extra virgin olive oil
1/2 cup pizza sauce
8 ounces fresh mushrooms, diced
4 eggs
1/2 cup low-fat cream
¼ tsp fresh garlic, crushed
½ tsp Italian seasoning
½ tsp basil
½  cup green pepper, diced
8 ounces low-fat mozzarella cheese, cubed
1/2 cup red onion, diced
3 ounces pepperoni, chopped (optional)
Crushed red pepper to taste

Ingredients for Pizza Sauce
8 ounce of tomato sauce
2 tsps tomato paste
1/2 cup water
2 tsps brown sugar
1 tsp garlic, crushed
½ tsp basil
½ tsp crushed red pepper

To make the pizza sauce, combine the ingredients in a saucepan and bring to a boil.  Cover the pot and simmer over low heat for 1 hour, stirring from time to time.

Whisk the eggs together with the cream, pizza sauce, garlic, spices and seasonings. Brown the sausage and mushrooms. Grease a 7x9" deep baking dish with extra virgin olive oil and then add the pepperoni, sausage, mushrooms, peppers and mozzarella cubes. Add the egg mixture and mix it all together well. Add the red onion and a little more Italian seasoning and crushed red pepper. Bake at 350º for 50-55 minutes. Let stand for five to 10 minutes before serving. Makes 8 servings
