Low Carb Strawberry Summer Salad

A member of one of our medical weight loss clinics shared this excellent and nutrient-rich low carb dinner idea for a Strawberry Summer Salad that is perfect for this time of year. It’s light but filling, extremely refreshing and tastes absolutely delicious—plus it’s easy to prepare.

This salad is packed with healthy nutrients, starting with chicken, an excellent source of the lean protein that helps curb our appetites and build the lean muscle mass we need to increases our calorie burn. Chicken is also packed with vitamin B6, which is essential for cardiovascular health, and B3 (niacin), which boosts energy, improves brain health and has shown to help protect against cancer. In addition, the selenium in chicken helps regulate thyroid function.

Strawberries are an ideal ingredient for recipes for a low carb diet —they are loaded with antioxidants and fiber, yet only contain 54 calories per cup. They are rich in flavonoids called anthocyanins, which give them their beautiful color, stimulate fat burn and reduce risk for cardiovascular disease. Strawberries are also packed with potassium, magnesium and vitamin K, all of which are important for bone health, as well as biotin, which promotes healthy hair and nails.

½ lb. boneless skinless chicken breast, grilled
3 cups strawberries, sliced
8 cups of a blend of spinach and arugula
1/2 cup pine nuts, slivered
2 oz. feta or goat cheese
½ cup aged balsamic vinegar

While the chicken is grilling, blend one cup of strawberries with ½ cup of aged balsamic vinegar in a food processor to create the dressing. Toss the spinach and arugula into a bowl. Add the remaining two cups of strawberries, pine nuts and feta or goat cheese and toss well. Drizzle the balsamic vinegar and strawberry dressing over the top and serve.
