Cilantro Lime Shrimp

Cilantro Lime ShrimpIt’s time for another one of our delicious recipes for a low carb diet—Cilantro Lime Shrimp. Shrimp is an excellent choice for those trying to lose weight, as it is an excellent source of high quality, lean protein. It only contains around 202 calories per six ounce serving yet boasts 39 grams of protein.

Shrimp is loaded with astaxanthin, a carotenoid that is renowned for its anti-inflammatory and antioxidant properties. It’s also rich in both selenium and zinc, minerals that are important for enzyme activation. Zinc activates the enzymes in our body that produce energy and boost immunity, while selenium activates those that support a healthy metabolism and fight cancer. In addition, the vitamins present in shrimp promote healthy red blood cells, such as vitamins A and B-12.

When it comes to recipes for a low carb diet, this one is ideal because it’s easy to make and so tasty, no one will suspect it’s a recipe that’s good for you. Enjoy!

2 lbs large shrimp, peeled and deveined
1 cup extra virgin olive oil
1 fresh lime, juiced
3 garlic cloves, minced
¼ cup fresh cilantro, chopped
1 tsp Himalayan sea salt
1 tsp freshly ground pepper

Combine the extra virgin olive oil, lime juice, garlic, tomato paste, cilantro, Himalayan sea salt and freshly ground black pepper in a bowl. Mix well. Set aside a small amount for basting and pour the majority of the marinade into a large resealable plastic bag or Tupperware container with the shrimp inside. Seal the contents and then marinate in the refrigerator for a minimum of four hours.

Lightly grease the grill grate. Preheat the grill while you put the shrimp on skewers. Pierce them each near the head and the tail. Cook shrimp for approximately five minutes on each side or until they are opaque. Baste the skewers with the marinade you set aside. Serve immediately.
