Low Carb Moroccan Chicken

This recipe for Moroccan Chicken is zesty, filling and very easy to make.

Some of our best low carb dinner ideas feature chicken, which is an excellent choice for those trying to lose weight. It’s an ideal source of lean protein and is one of the few foods considered a “complete protein,” which means it boasts all the nine amino acids our body needs to function properly. It’s also very filling, promotes healthy digestion and is loaded with important nutrients such as zinc, niacin, phosphorus, selenium and vitamin B6, among others.  
The spices in this recipe don’t just add zest and flavor, they will help boost your metabolism and provide an array of other health benefits. For example, turmeric contains compounds called curcuminoids that have strong antioxidant and anti-inflammatory effects, while cayenne pepper promotes healthy digestion and boasts many anti-bacterial and disease fighting properties.

4 skinless chicken breasts 
1/2 cup extra virgin olive oil 
¼ cup scallions, chopped 
¼ cup fresh parsley, diced 
¼ cup cilantro, chopped   
1 tbsp garlic, minced 
2 tsp ground cumin  
½ tsp turmeric 
¼ tsp cayenne pepper 
1 tsp Himalayan sea salt

Combine the extra virgin olive oil, turmeric, cayenne pepper, scallions, garlic, parsley, cilantro, cumin and Himalayan sea salt in a food processor and process until the mixture is smooth.

Seal the chicken breast in the mixture in either a freezer bag or plastic container. Let it marinade a minimum of 30 minutes to several hours.

When you’re ready, remove the chicken from its marinade container and preheat the grill to medium heat. Grill the chicken for six to eight minutes on each side. Enjoy!
