It’s easy to prepare and can be eaten any time of day—it’s equally delicious for breakfast, lunch and dinner.
The turkey bacon and egg are both good sources of protein, with the egg being ideal since it’s considered a “complete protein.” This means it boasts all nine of the essential amino acids your body needs to function optimally. The egg and avocado also provide healthy fats that fill you up, elevate your mood, make your skin glow and boost cardiovascular health. The tomatoes are loaded vitamins A and C, and beneficial antioxidants including lycopene, choline, folic acid, beta-carotene and lutein. In addition, tomatoes are a rich source of alpha-lipoic acid, which helps the body convert glucose into energy.
The baby spinach greens in this low carb diet recipe round out the salad with a nice serving of fiber, which fills us up and promotes healthy digestion. Our weight loss centers recommend leafy green veggies such as spinach because it’s also rich in protein, iron, magnesium and potassium.
1 ripe Haas avocado, diced
2 hard-boiled eggs, chopped
1 large tomato, chopped
1/8 cup Freshly squeezed lemon juice
4 cooked pieces of low-fat turkey bacon, crumbled
2 cups baby spinach greens
Himalayan sea salt to taste
Freshly ground black pepper to taste
This recipe is beyond easy to prepare. Put the lettuce greens in a salad bowl and add the eggs, avocado, tomato and turkey bacon. Toss well. Sprinkle the crumbled turkey bacon over the top. Drizzle the lemon juice like a dressing and continue to toss. Finally, season with Himalayan sea salt and freshly ground pepper to your liking. Makes two solid servings.
