Almond Crusted Tilapia

1 pound tilapia fillets
1 tsp extra virgin olive oil
1/2 cup slivered almonds, crushed
1⁄4 cup slivered almonds
1⁄4 cup whole wheat flour
3 cloves garlic, minced
2 tbsp fresh lemon juice
1/4 tsp dried basil

Freshly ground pepper and Kosher sea salt to taste

1/8 cup low fat butter, softened (optional)

Finely chop 1⁄2 cup almonds or blend them in a food processor. Mix them with the whole wheat flour in a bowl and combine well.

Season the tilapia with the lemon juice, kosher sea salt and freshly ground pepper. Immerse each filet in the almond and flour mixture until entirely covered.

Heat the extra virgin olive oil (with butter if you desire) heavy skillet over medium heat. Add the tilapia and cook for approximately four minutes on each side—the tilapia will be golden when it’s cooked thoroughly. Remove the tilapia and then add the 1/4 cup slivered almonds to the skillet and cook for an additional minute, stirring repeatedly. Sprinkled them over the tilapia and serve.
