Lycopene has been shown to help combat osteoporosis, prevent cataracts and age-related macular degeneration, and fight free radical damage. In addition, lycopene acts as an internal sunscreen and helps protect your skin from sun damage. Naturally low in calories, fat and sodium, tomatoes are also excellent sources of potassium, copper, magnesium, phosphorus, folate and vitamins A, C and K.

Composed of nearly 95 percent water, cucumbers help you stay hydrated while providing a variety of nutrients, including numerous antioxidants, such as beta-carotene and vitamin C, as well as minerals such as potassium, copper and manganese.
