Low Carb Smoked Salmon Stack- Monday, April 20, 2015


This is a delicious and healthy low carb recipe for spring—the Smoked Salmon Stack. It’s refreshing, tasty and super easy to make—serve it for lunch, as a snack or your dinner entrée with some other healthy veggies on the side. It’s the ideal meal for those on diets and easy weight loss programs, but it’s satisfying and tasty enough for the whole family to enjoy. 

Did we mention this simple dish is packed with important nutrients? Also known as lox, smoked salmon is very nutrient-dense—it’s an excellent source of healthy omega-3 fatty acids and high-quality protein, making it very filling. It also contains an array of vitamins and minerals, including selenium, potassium, magnesium, vitamin D and vitamin B12, which promotes a healthy metabolism.

Tomatoes are an antioxidant-rich veggie with loads of the carotenoid lycopene, which boasts an array of healthy benefits. Lycopene has been shown to help combat osteoporosis, prevent cataracts and age-related macular degeneration, and fight free radical damage. In addition, lycopene acts as an internal sunscreen and helps protect your skin from sun damage. Naturally low in calories, fat and sodium, tomatoes are also excellent sources of potassium, copper, magnesium, phosphorus, folate and vitamins A, C and K.  

Composed of nearly 95 percent water, cucumbers help you stay hydrated while providing a variety of nutrients, including numerous antioxidants, such as beta-carotene and vitamin C, as well as minerals such as potassium, copper and manganese.

Ingredients
8 ounces smoked salmon
2 large tomatoes
2 large cucumbers
4 tbsp reduced fat cream cheese
One fresh lemon
Dill for garnish
Freshly ground pepper to taste

Cut off the bottom and top off of each tomato and then slice in half. Spread one tbsp reduced-fat cream cheese on each tomato half and then top with slices of salmon. Season with freshly ground black pepper and add dill for garnish. Squeeze lemon over each stack and serve.
