8 ounces smoked salmon
2 large tomatoes
2 large cucumbers
4 tbsp reduced fat cream cheese
One fresh lemon
Dill for garnish
Freshly ground pepper to taste
Cut off the bottom and top off of each tomato and then slice in half. Spread one tbsp reduced-fat cream cheese on each tomato half and then top with slices of salmon. Season with freshly ground black pepper and add dill for garnish. Squeeze lemon over each stack and serve.
